I’m far from the first person to bring up the idea of online perfection. Those stylized photographs of quinoa bowls and waffle stacks and bright-white clean kitchens are an idealized version of reality. These images can present a myth of perfection. But of course behind each of them are real people, people with cracks and blemishes and insecurities. People who are simply seeking to capture beauty among the imperfectness of this life.
I know from experience, behind each gorgeous image are at least 127 terrible ones of the same shot. And I’m certain the lives of the people behind the images are littered with imperfections too, just like mine! We’re all human. And we’ve all gotta eat! So here’s a simple weeknight recipe for those times when you have energy for nothing more than picking up some simple ingredients from the store. It’s our Thai curry pizza with naan bread, and it’s darn good too.

How to make curry pizza
So, what’s curry pizza anyway? In this recipe we tried something completely different than the typical way to eat naan and curry. Asian-style pizza isn’t common, but we decided to try something out of the box with this curry pizza recipe. We found that the combination of Thai curry paste mixed with canned tomatoes makes for an ultra delicious pizza sauce! To bring in the Thai curry vibe to the toppings, over the mozzarella cheese we added cashews, thinly sliced green onions and cilantro. The toppings are very simple, but the flavor that’s achieved is unique and intense! We’re all about fusion recipes like Greek Quesadillas, Mexican Pizza, and Mexican Lasagna, so the fusion of Thai curry and pizza was right up our alley.

Naan pizza ideas
Making naan pizza is one of our favorite ways to make a fast and easy dinner recipe. When we make naan pizza, we pre-bake the naan to make a lightly crispy crust. Then we add the toppings and bake for another few minutes until the cheese is melted. That’s it! It’s so simple and such and easy way to make a weeknight meal. One pizza per person works well if served with a large salad; if cooking for big appetites you may want to plan for 1 ½ to 2 per serving.

Ingredients
- 4 pieces naan bread
- 15 ounces Muir Glen crushed fire-roasted tomatoes
- 1 ½ tablespoons red curry paste
- 2 teaspoons Sriracha hot sauce
- 1 red pepper
- 2 green onions
- 1 cup shredded mozzarella cheese
- ¼ cup cashews
- 1 handful fresh cilantro
- Kosher salt
Instructions
- Preheat oven to 450°F. Place naan directly on the oven grate and pre-bake 3 to 4 minutes per side until crisp.
- Meanwhile, in a medium bowl, combine Muir Glen crushed fire-roasted tomatoes with red curry paste, Sriracha, and a few pinches of kosher salt.
- Thinly slice the red pepper. Thinly slice the green onions.
- When the naan is ready, spread each with the tomato mixture, then top with mozzarella cheese, vegetables, cashews, and a sprinkle of kosher salt. Bake for 5 minutes, until the cheese is melted.
- Meanwhile, chop the cilantro. Remove the pizza from the oven and garnish with a few cilantro leaves. Slice and serve immediately.

I’ve never had an Asian-inspired pizza, but I can’t wait to try this! I especially love the addition of cashews.
Life is certainly messy. And it helps to remember, it’s not just us. Everybody has something beneath the surface, and it’s often a struggle. But the more people talk about struggles, the more we realize how together in this messy life we truly are (even in this internet friendship world). You express your vulnerability and struggles in a way that can help others see, and hopefully share, their own. For some reason, I just got the image of the “Hands Across America” from, I think, the 80’s in my head. Sappy, but cool.
